Provencal Bake
Ingredients
a little olive oil
A large onion (thinly sliced)
1 crushed clove of garlic
1 Red Pepper thinly sliced (seeds discarded)
about 225g sliced courgettes
herbs to tase - for eg. mixed Herbs of Provence or chilli powder
A 400 g tin of tomatoes
seasoning to taste
a few drops of tabasco (optional)
4 eggs
50g. of strongly flavoured grated cheese for eg. cheddar
Method
Heat oven to Gas Mark 5, 375F. or 190C
Heat the oil in a frying pan and gently soften and cook the onions and
garlic.
Add the pepper and courgettes, stir and continue cooking gently for
5 more minutes.
Stir in the tomatoes (with juices), herbs, seasoning and tabasco if
desired. Heat the mixture.
Grease a shallow, ovenproof dish and pour the mixture into it.
Push the mixture aside to create 4 indentations and break an egg into
each
Sprinkle the surface with the cheese.
Bake in the oven for about 15 minutes or until the eggs are just set.
Serve with crusty bread..
