Salad with Carrot & Apple
Ingredients
About 275 g carrots (coarsely grated)
3 dessert apples (Cox's Orange Pippins preferably or a similar variety)
1 tbsp. each of lemon juice and sunflower seeds.
3 tbsps. raisins
a little olive oil
2 tbsps. cashew nuts
Dressing (see below)
Lettuce leaves
Method
Heat the olive oil and gently brown the cashew nuts.
Drain the nuts on kitchen paper and allow to cool,
Place grated carrots in a large bowl.
Slice the apples quite thinly (do not peel) and sprinkle with lemon
juice (prevents their turning brown)
Add apples to carrots.
Stir in the raisins and sunflower seeds.
Add the cashew nutes to the mixture in the bowl.
Toss the mixture with a salad dressing of choice; preferably one based
on white wine vinegar (or lemon juice) and olive oil (proportions 1:3);
a spoonful of mustard (eg. whole grain or dijon), salt & pepper,
and crushed garlic. Mix it all together and shake well. Spoon over the
salad salad before the oil and vinegar separate again.
Turn onto a bed of crisp green leaves and serve with crusty bread .
