Borscht with a swirl

Ingredients
Approx 2 pints vegetable stock
3-4 large beetroots
2 onions
In quanitites according to taste: carrot, celery, parsnip, shredded cabbage
a tin of tomatoes
a crushed garlic clove
Seasoning to taste

Method
Peel the beetroots and grate them coarsely.
Chop the other vegetables into small pieces.
Bring the stock to the boil.
Add everything except the cabbage to the boiling stock and simmer for about 20 minutes.
Add the cabbage and simmer for a further 15 minutes.
Serve hot with a swirl of sour cream, if desired, and crusty bread.
